Meet Rosario Carillo, the visionary founder of Dame Mas Tequila. With over a decade of experience in the tequila industry, Rosario embarked on her journey as a professional taster for leading tequila brands. Despite her admiration for these brands, she felt something crucial was missing—the smoothness that allows the spirit to be savored without the sharp bite often concealed by lemons or salt.

A Journey Through Time

The art of tequila begins with the agave, meticulously planted in fertile, sun-drenched fields. These spiky beauties take years to mature, drawing their essence from the rich Mexican soil.

After years of patient growth, the agave reaches its peak, its heart, the piña, brimming with potential. Our skilled jimadores harvest these piñas by hand, ensuring only the finest agaves contribute to our artistry.

The harvested piñas embark on a transformation. We utilize time-tested methods, slow-cooking them in either hornos (earthen ovens) or autoclaves (modern pressure cookers) to unlock the agave’s hidden sugars, a crucial step in the art of tequila.

Once cooked, the piñas are expertly milled, their fibers releasing the sweet nectar known as mosto. This essential ingredient forms the base for our artistic expressions of tequila.

5. Fermentation

The mosto undergoes a magical process called fermentation. Yeast is introduced, transforming the sugars into alcohol, creating the foundation of our spirit. This is where the artistry of tequila truly blossoms.

The fermented liquid enters the heart of our distillery, the copper stills. Through a meticulous double distillation process, impurities are removed, and the pure spirit we know as tequila is born. This is where the art of tequila achieves its purest form.

For some of our tequilas, the art continues. Select tequilas are carefully aged in white oak barrels, where they develop rich, complex flavors and a smooth, sophisticated character.
